A pocket knife is one of the Staples every man should have in his wardrobe and this looks to be a fine-looking option. Sorry, no idea where to buy it.

Scrimshaw is carved from whale bone. You will find lots of this stuff in New England, particularly on the islands off Cape Cod (Nantucket and Martha’s Vineyard). I am sure you get get them online these days too.
And the steel of the blade, which makes the knife just as much as the Scrimshaw, is made from Damascus steel, made by folding two types of steel over and over in a forge. It’s a super high quality steel, and it has a ton of character.
For the guy who is handy, who is a craftsman, the best way to get a totally legit knife is to make it yourself (from scratch would be killer, but from a kit is enough)

Very few “Damascus Steel” blades are actually real. Most only have the appearance. However, they are very cool if real. Damascus Steel was awesome in its time for a variety of reasons, but one needs to be aware it is a realatively soft steel.
